專科學生時代在台南. 居住在處處傳統小吃的府城, 偶爾, 我們也會嚐試所謂異國風味. 16歲那年, 到了台南才開始接觸真正的咖啡文化. 其中, 義大利風情的麵食及燉飯, 是朋友聚會的選擇之一. 記憶中, 燉飯總是舖滿一層厚厚的Cheese. 也不知道是何類的起司, 以為那種會'牽絲'的就是道地的象徵. 剛到倫敦的前幾年, 台灣式的燉飯長長地駐守我腦中, 義大利菜從不是我們上餐廳時想嚐試的風味. 直到, 我們到了 Tuscany, 才得親嚐真實Italian料理的魔力.  歷史課本上, 義大利是充滿傳統及羅馬歷史的國家, 其實, 在19世紀義大利統合為一國以前, Kingdom of Sicily, Republic of Genoa, Kingdom of Sardinia, Grand Duchy of Tuscany, Republic of Venice, Duchy of Parma, Duchy of Modena, Papal States...等等都是一個個獨立的王國. 也因為這樣地理及氣候的優勢, 由南到北, 各個地區都有當地引以為傲的食材及文化. 除了流行設計之外, 義大利的生活元素大多延續傳統, 日常生活中力行真正的慢食主義. 而秋季節更是當地食材豐收成果的時節, 有剛收成的新鮮橄欖及有如翠玉般的冷榨橄欖油, 葡萄園結束採摘, 成橘紅色的山谷中, 有滿地毛茸茸的栗子, 神密的Porcini(Ceps) 及 Truffles...

啊! 我要談的是Risotto, 說著說著就離題了. 在倫敦的Borough Market可以找到中等品質的確Porcini, 僅管是南非產的, 也是身價不匪. 全年中, 有時, 我們會用乾的Porcini煮Mushroom Risotto, 打牙祭! 道地的Risotto, 最重要的是米 (Carnaroli and Arborio Rice) 以及高湯. 我們用的是 Arborio米和海鮮貝類烹煮的高湯. 非產季時, 我們用一般的大磨菇及乾燥的Porcini. 因為紀錄這道菜時, 遇上了英國的蘆荀季, 所以也加入了一些.

Things may have changed since its first publication 400 years ago, but the region where it happens, La Mancha, still retains a lot of tradition. The area has preserved traditional ways of living and proudly producing one of the most consumed Spanish cheese in the world - Manchego!
